Mustard My Day
Introduction
There are more than three dozen varieties of mustard plants but the three commonly used varieties are black, brown, and white mustard seeds. Black mustard seeds are native to North Africa and some parts of Europe and Asia. Brown mustard originated in the Himalayas and white originated in the Mediterranean area.
Mustard is rich in antioxidants, vitamins, and minerals. It has been shown to have anti-inflammatory and anti-cancer properties. Mustard with its long history is used in a variety of dishes and can also be served as a condiment.
Mustard sauce is a condiment made by mixing yellow mustard with vinegar and other spices. The sauce is thick and tangy, and it can be used as a dip or spread. The mustard sauce can be made at home by using simple ingredients. There are many different recipes for mustard sauce and individuals can tailor the recipe to their preferences.
Things We Need
Black mustard seeds: 800 grams
Brown mustard seeds: 400 grams
Red pepper powder: 2 tablespoons
Turmeric powder: 1 ½ tablespoons
Brown mustard powder: 4 tablespoons
Vinegar synthetic: ½ cup
Organic apple cider: 1½ cup
Salt: to taste (roughly 6 teaspoons)
Dried garlic powder: 2 tbsp
Pickle juice aka sauerkraut liquid:1 cup
Note: *If you want to make it ‘living’, then use pickle juice otherwise synthetic vinegar works well too just use 1 ½ instead of ½ cup.
How It Would Be Done
1. Grind the mustard seeds coarsely and mix vinegar with the pickle juice (sauerkraut liquid)
2. Mix all other dry ingredients in jars. Make sure to fill only 1/3rd one-third of the jars. The rest will be filled with a liquid mixture from the above step. Mix well and don’t overfill.
3. Loosely tighten the lids on the jars. A tight lid would not let any gases escape the jars and the jars can break apart which would create a messy situation
4. Shake the jars every day and let them sit for 3 to 5 days at room temperature in darker areas of your house.
5. Tada! By the 6th day, the mixture would be mature enough to be part of your sandwich or any other way you consume it. Note: It’s important to shake the jars daily. Just in case you have poor memory like me you can set reminders on your phone. This paste has living organisms due to the organic apple cider vinegar and sauerkraut liquid, and both have their health benefits.
